4 oz tofu, firm, cut into cubes

1/2 tablespoon oil, canola

1 cup mixed vegetables, frozen
Preparation:
Calories: 331, Saturated Fat: 1g, Sodium: 35mg, Dietary Fiber: 4g, Total Fat: 22g, Carbs: 18.5g, Cholesterol: 0mg, Protein: 20.6g
Instructions:
Heat oil in skillet; sauté tofu 3 to 4 minutes over medium-high heat until it starts to brown. Add mixed vegetables and cook for an additional 2 to 3 until heated through.
