Asparagus Tomato Salad & Yoghurt Dressing

This is a yummy alternative to cooked veggies

Serving Size:
Serves 4 hungry guys
1 lb asparagus spears, tips and tender stalk
1 large tomato, chopped
3 green onion, chopped
1/4 c. non-fat plain yoghurt
1 Tbsp. Parmesan cheese, grated (fresh is best)
1 tsp. dijon mustard
10 romaine lettuce leaves
Preparation:
Wash and snap the asparagus. Cut in bite size chunks. Chop tomato and onion and combine with the asparagus in a medium bowl. Set aside.
Instructions:
In a small bowl, whisk together the yogurt, cheese and mustard. Add to the vegetable mixture and toss until well coated. To serve, line salad plates with romaine lettuce leaves and spoon salad on top.
