Instructions:
1. Preheat oven to 425°F.
2. Slice the sweet potato on a mandolin to ensure thin, even slices.
3. Place slices into a Ziploc® bag or plastic container with a top, making sure there's a little room. Add remaining ingredients and shake up to coat well.
4. Spread coated slices over lightly greased cooking sheet.
5. Sprinkle additional Splenda® and cinnamon to ensure a tasty colorful coating.
6. Bake at 425°F for approximately 25 minutes until browned.
