4 oz uncooked whole wheat pasta- corkscrew shape 4 oz whole wheat pasta - wheel shaped 1/3 cup olive oil 1/4 cup lemon juice 1 tsp oregano 1 tsp dijon mustard 1/2 tsp salt 1/4 tsp pepper 2 garlic cloves minced 2 1/2 oz black olives- sliced 1 green pepper chopped 1 red pepper chopped 3/4 cup grape tomatoes- halved 1 med yellow summer squash halved length wise and sliced 1 med zucchini, halved length wise and sliced 1 cup frozen peas thawed |

cook pasta according to box directions, drain and rinse in cold water. set aside prepare salad dressing by mixing together oil. lemon, oregno, mustard, salt, pepper and garlic in a small bowl. set aside til ready to use in a large bowl combine cooked pasta with veggies, pour in dressing and toss to coat. cover and chill about 2 hours | |
