Thai Chicken Burgers

Ingredients

400g lean chicken mince
1 cup fresh breadcrumbs
1 clove garlic, crushed
1/2 cup chopped fresh coriander leaves
1/4 cup sweet chili sauce
1 tsp ground coriander
3 spring onions, finely chopped
1/4 cup sugar
2 tbsp white vinegar
2 tbsp finely chopped peanuts
1 tbsp chopped fresh coriander leaves, extra
1 large carrot
1 large Lebanese cucumber
4 hamburger buns
70g mixed lettuce leaves
1 large wine-ripened tomato, sliced

Directions

Place the mince, breadcrumbs, garlic, fresh coriander, sweet chilli sauce, ground coriander and spring onion in a large bowl, and mix together with your hands. Shape into four patties. Refrigerate, covered, for 30 minutes.

Place the sugar, vinegar and 1/4 cup (60 ml) water in a small saucepan, and stir over low heat until the sugar dissolves. Simmer for 5 minutes, or until slightly thickened. Cool and tir in the peanuts and extra coriander. Peel strips of carrot and cucumber to make 'ribbons'.

Heat a chargrill plate and grill the burgers for 4 minutes each side, or until tender. Serve on hamburger buns, with the dressing, lettuce leaves, tomato, carrot and cucumber.
