Spinach-Stuffed Chicken Breasts

4 boneless, skinless 6 oz. chicken breasts
1 box of store-bought stuffing mix
4 egg whites
1 oz. pine nuts
1/2 cup spinach (fresh or frozen),
1 can of low-fat cream of chicken soup
1 can of water (use soup can)
1 green onion, chopped
Preheat oven to 350F.
Wash chicken breasts under cold water.
Prepare stuffing according to directions on box and add egg whites, pine nuts, and spinach.
Place chicken breasts on clean counter top or board. Place 1 tbsp. of stuffing on top of chicken. Roll breast up and place in square baking dish.
Mix soup with water and pour over chicken. Sprinkle with green onions.
Bake in oven for 25 to 30 minutes.
