Spicy Chicken Tandoori

Ingredients

4 boneless chicken breasts
6 tbls lemon juice
2 tsp salt
1 tsp ground coriander
1/2 tsp cumin
1 tsp ground ginger
1/2 tsp garlic powder
2 tbls paprika
1/4 tsp cayenne pepper
10 oz plain yogurt
1 tbls vinegar
2 tbls lemon rind
lemon wedges to garnish

Directions

Cut chicken at 1" intervals about 1/2 inch deep.
Mix together lemon rind, lemon juice and salt.
Rub into chicken.
Combine remaining dry spice ingredients with remaining lemon juice to make a smooth paste.
Stir in yogurt and vinegar.
Spread 3/4 of mixture over chicken in shallow baking dish.
Cover with foil and let marinate for 2 hours or even better overnight.
Bake at 400F for 15 minutes.
Spoon the rest of marinade over chicken.
Cook at 350F for 1 hour
