1/2 cup buttermilk
1/2 cup cornflakes- crushed
3 tbls flour
1/4 tsp each of salt and pepper
2 pounds boneless chicken- no skin
4 tsp canola oil
*if you don't have buttermilk on hand you can make your own by taking 1/2 cup fat free milk and adding 1 tsp vinegar
Preheat over to 400F - spray baking sheet with cooking spray.
Pour buttermilk in a shallow bowl.
On wax paper combine cornflakes, flour and salt & pepper.
Dip chicken in buttermilk then dredge in cornflake mixture.
Place on baking sheet and drizzle with oil.
Bake for 30 minutes.
Turn and bake 30 minutes longer
