Sausage (or Ham) Lentil Soup

1/2 lb. bulk Italian sausage (or ham)
1 large onion, finely chopped
1 large clove garlic, finely minced
1 small carrot, finely chopped
1 small green pepper, finely chopped
1 bay leaf
2 cans (14.5 oz. each) chicken broth
1 can (14.5 to 16 oz.) tomatoes with
liquid coarsely chopped
1 cup water
3/4 cup dry lentils
1/4 cup country style or regular Dijon
In a Dutch oven, brown and crumble the sausage (or brown ham).
Add the next nine ingredients;
Cover and simmer 1 hour or until the lentils and vegetables are tender.
Stir in the mustard.
Remove bay leaf before serving.
