Salmon Loaf

This is a great way to serve canned salmon when you get sick of sandwiches. Serve with tartar sauce.

Ingredients

1 can (16 ounces) salmon, drained
2 cups bread crumbs
2 eggs, lightly beaten
1/2 cup milk or evaporated milk
2 tablespoons finely chopped onion
1 tablespoon dried parsley flakes
1 teaspoon salt
dash pepper

Directions

Mash salmon; combine with remaining ingredients and pat in a buttered loaf pan about 9 x 5 x 1-inch. Bake at 350F for 45 minutes, or until loaf is firm.
