Ricotta Cookies

Ingredients

WET

2 c. Sugar
1/2 lb. Butter
2 Eggs
1 lb. (16 oz.) Ricotta Cheese
2 tsp. Vanilla

DRY

4 c. Flour
1 tsp. Baking SODA
1 tsp. Baking POWDER

Icing Mix

1 1/2 c. 10X Confectioners Sugar*
3 to 4 tbsp. Milk*

Directions

Pre-Heat Oven at 350F
Cream together Butter & sugar.
Add eggs and BEAT.
Add Ricotta & Vanilla and BEAT.
Mix all dry ingredients and sift or whisk.
Add Dry ingredients slowly to wet ingredients.
Drop dough onto cookie sheets.
Bake 350F for 10-12 minutes.

**NOTE: Spread icing on cookies while still warm (not hot) for best effect; also add a drop of food coloring for a little splash of color.**
