Pot Luck Pasta Salad

Ingredients

4 oz uncooked whole wheat pasta- corkscrew shape
4 oz whole wheat pasta - wheel shaped
1/3 cup olive oil
1/4 cup lemon juice
1 tsp oregano
1 tsp Dijon mustard
1/2 tsp salt
1/4 tsp pepper
2 garlic cloves minced
2 1/2 oz black olives- sliced
1 green pepper chopped
1 red pepper chopped
3/4 cup grape tomatoes- halved
1 med yellow summer squash halved length wise and sliced
1 med zucchini, halved length wise and sliced
1 cup frozen peas thawed

Directions

Cook pasta according to box directions, drain and rinse in cold water.
Set aside

Prepare salad dressing by mixing together oil.
Lemon, oregano, mustard, salt, pepper and garlic in a small bowl.
Set aside until ready to use

In a large bowl combine cooked pasta with veggies, pour in dressing and toss to coat.
Cover and chill about 2 hours
