Pork Chop Suey

3/4 to 1 pound stir fry pork chunks- cut into small pieces
5 stalks celery- cut up small
2 cans chop suey vegetables- drained
In a large skillet add about 2 tbls olive oil, add pork and lightly brown then add celery and saute 3 minutes.
Add enough water to cover pork and celery and 1 tbls soy sauce and cover and simmer til pork is tender, adding water if needed.
When pork is tender add chop suey vegetables and cook 5 minutes more til hot.
Add more soy sauce depending on taste.
Serve over brown rice
