1/2 cup chopped onion
3/4 cup chopped green peppers
1 clove garlic, minced
1 lb boneless, skinless chicken cut into strips
1 can diced tomatoes with basil, garlic and oregano
1/2 cup sliced black olives
Cook and stir onion, peppers and garlic in olive oil in large skillet over med-high heat for 4 minutes.
Add chicken and cook 5 minutes or until browned.
Add undrained tomatoes and olives, bring to a boil, reduce heat and simmer uncovered for 15 minutes or until slightly thickened.
Season with salt and pepper.
Serve over brown rice
