1 lb very lean ground beef
2 cups carrots
1 cup onion
1 cup celery
12 oz potatoes
1/4 tsp garlic powder
2 packets instant beef broth & seasoning or 1 packet dry onion soup mix
1 cup tomato sauce
4 tsps dry tapioca
1 cup water
Mix one of the beef broth packets or 1/2 onion soup packet in with the ground beef and form 16 meatballs.
In a small bowl mix tomato sauce, water, garlic powder, tapioca and remaining beef packet or onion soup mix.
Cut unpeeled potatoes and veggies into 1 inch chunks.
Spray a large shallow pan.
Layer veggies and potatoes with carrots near the bottom.
Lay meatballs on top and pour sauce over all.
Cover with foil and bake at 400F for 2 hours or put in crock pot and cook all day.
