Mama Mia Vegetable Pie

Ingredients

1 tsp olive oil
1 med bell pepper chopped
1 small onion chopped
3 med portobello mushrooms chopped
12 oz can tomato sauce
6 oz firm tofu drained and crumbled
2 cups cooked spaghetti
3/4 cup mozzarella cheese shredded

Directions

Preheat over to 375F
Heat oil in nonstick skillet over med-high heat.
Add pepper, onion, and mushrooms.
Saute until vegetables are tender about 5 minutes.
Stir in tomato sauce and tofu.
Bring to a boil.
Reduce heat and simmer uncovered for 10 minutes

Coat a 9 inch deep dish pie plate with cooking spray.
Arrange spaghetti in bottom and up sides.
Pour in mixture and sprinkle with cheese.

Bake 20 minutes and let stand 5 before slicing
