Kentucky Beer Cheese

The story goes that beer cheese was invented in Kentucky. While I can't verify that, I can tell you it is a very popular dish around the state. It makes a wonderful appetizer!

Ingredients

1 lb. Cheddar Cheese - fine
1 lb. Mild cheddar - fine
1 clove minced garlic
1 tsp. salt
1 12oz. bottle of beer
3 Tbs. of Worcestershire sauce
4-5 drops of hot sauce
1 tsp dry mustard

Directions

Allow cheese to come to room temperature (about one hour. Pour beer in a glass and allow it to go flat.
Combine all ingredients, except beer, in a bowl or food processor. Beat with an electric mixer or process. Slowly add beer and mix until cheese is very smooth. Refrigate in a covered container. Remove from refrigerator 30 minutes before serving. You may have to whisk it a little to blend it again.
