| Ingredients 4 chicken breast fillets 2 tbsp honey 1 tbsp wholegrain mustard 1 tbsp soy sauce 2 red onions, cut into wedges 8 Roma tomatoes, halved length ways 2 tbsp soft brown sugar 2 tbsp balsamic vinegar cooking oil spray snow pea sprouts, to serve Directions Preheat the oven to moderate 180C. Trim the chicken of any excess fat and place in a shallow dish. Combine the honey, mustard and soy sauce, and pour over the chicken, tossing to coat. Cover and refrigerate for 2 hours, turning once.
Place the onion wedges and tomato halves on a baking tray covered with baking paper. Sprinkle with the sugar and drizzle with the balsamic vinegar. Bake for 40 minutes.
Heat a chargrill pan and lightly spray it with oil. Remove the chicken from the marinade and cook for 4-5 minutes on each side, or until cooked through. Slice the chicken and serve it with the snow pea sprouts, tomato halves and onion wedges. | |
