Hearty Beef Barley Soup

Ingredients

1 tsp basil
1 tsp each salt & pepper
1 small chuck roast
1 lg onion- diced
1 lg bag mixed vegetables
1/2 head of cabbage - diced
3/4 cup small barley
2 chicken bouillon cubes
1 lg can tomatoes in puree

Directions

Cover meat, bouillon, basil and onion with water.
Simmer for one to two hours.
Remove meat from water, cool.
Add remaining ingredients and simmer an additional hour.
Dice meat and add to soup
