| Ingredients 2 tablespoon light brown sugar 1 teaspoon lime peel, grated 2 tablespoon lime juice, fresh 1 teaspoon orange peel, grated 2 tablespoon orange juice, fresh 1 tablespoon honey 1/4 teaspoon cinnamon 2 cups fresh pineapple diced 2 medium bananas, diced, firm, ripe (about 1 1/2 cups) 1 cup strawberries, diced 1 cup blueberries 2 medium kiwi, diced, peeled (about 3/4 cup) 1 large orange, coarsely chopped sections (about 1/2 cup) 1/2 cup sugar 1 teaspoon cinnamon 20 wonton wrappers, each cut in half diagonally cooking spray, butter-flavored Directions Combine first 7 ingredients in a small bowl; stir well.
Combine pineapple and next 5 ingredients in a large bowl. Add dressing, tossing gently to coat. Cover and chill 1 to 4 hours. Serve with Cinnamon Chips.
Yield: 8 servings (serving size: 3/4 cup salsa and about 5 chips).
Cinnamon Chips:
Preheat oven to 375F.
Combine sugar and cinnamon in a medium bowl; stir well.
Coat both sides of won ton wrappers with cooking spray, and dredge in cinnamon-sugar. Arrange won ton wrappers in a single layer on baking sheets coated with cooking spray. Bake at 375F for 9 minutes or until crisp and golden.
Yield: 40 chips. | |
