French Vinaigrette Slaw

1 tablespoon oil, olive, extra virgin
1 tablespoon vinegar, cider
1/2 teaspoon salt
1 clove garlic, minced
2 beets, 2 uncooked beets, shredded
2 cups cabbage, red, shredded
Combine first 4 ingredients in a small bowl; set aside.
Peel beets under running water to prevent hands from staining; shred beets.
Combine cabbage and beets in a bowl; add oil mixture, and toss. Serve immediately.
