Fast Black Bean Soup

4 tbls olive oil
1 onion, chopped
3 tsp finely chopped garlic
1/2 cup chopped green pepper
2 carrots, sliced
1/2 to 1 tsp finely chopped jalapeno peppers, or 1 tbls canned green chilies
1 tsp cumin
15 oz can black beans with liquid
2 cups canned veggie broth
2 tsp lemon juice
1 tbls finely chopped cilantro
sour cream (optional)
In a large saucepan heat oil and onions and saute for 1 minute.
Add garlic and saute 1 minute more.
Add green peppers, carrots, and jalapenos or canned chilies and saute for 4 minutes more.
Add cumin, beans, broth and cook for 20 minutes or more until veggies are tender.
Add lemon juice and cilantro and cook for a minute more.
Top with sour cream if desired and serve with tortilla chips or crusty bread.
