1 tbls olive oil
1 small onion chopped fine
2 cloves garlic, finely chopped
1 cup arborio rice
2 cups veggie broth
2 1/2 to 3 cups frozen chopped spinach
1/2 cup mushrooms chopped fine
1 med tomato, diced
1/2 cup parmesan cheese
Preheat oven to 400F
Heat olive oil in a large saucepan, add onion and saute 1 minute.
Add garlic and saute 1 minute more.
Add rice and stir to coat, add broth and bring to a boil.
Stir in spinach, mushrooms, tomatoes, and 1/4 cup of the cheese.
Pour into oiled casserole dish, top with remaining cheese, cover and bake for 40 minutes or until most of the liquid is gone and rice is tender.
