Chunky Chicken Salad

On days when you want a light supper, this works as a complete meal.
It has meat, vegetable, and fruits—all in one dish. Leftover roasted
chicken or fried chicken can be shredded or cubed for this refreshing
chicken salad recipe

1/2 kg chicken breast, cooked and cubed
1 red apple, cubed
1 green apple, cubed
1 stalk celery, diced
1/4 cup toasted walnut
1/4 kg whole seedless grapes
1 cup mayonnaise
1/2 cup all-purpose cream
2 teaspoons all-in-one seasoning granules
salt, sugar, and pepper to taste
grated cheddar cheese as garnish


Combine chicken, apples, celery, walnuts, and grapes in a bowl.

Prepare the dressing: In a bowl, combine mayonnaise and all-purpose cream.
Season with all-in-one seasoning granules, salt, sugar, and pepper.

Toss prepared salad ingredients together with the salad dressing. Chill in the
refrigerator until ready to serve. Garnish with grated cheese if desired.

Tip: Create a hearty chicken salad sandwich by using this recipe as filling to crusty
bread or loaf bread. Try substituting the fruits in this recipe with fruits in season like
mango, papaya, and pineapple.
