Chocolate Peanut Butter Balls

Ingredients

25 chocolate wafer cookies, finely crushed
1 cup + 2 tbls confectioners sugar
1/3 cup honey
1/4 cup + 2 tbls smooth peanut butter

Directions

Mix cookie crumbs and 1 cup confectioners sugar in a large bowl

Whisk together in a med bowl the honey and peanut butter until well combined. add the cookie crumb mixture and stir well. the mixture may be crumbly

shape the mixture with your hands into 1 " balls

Set the balls aside at room temp until ready to serve or store them in an airtight container at room temp for 2 to 3 days. just before serving roll balls in remaining 2 tbls confectioners sugar
