Chilli Con Carne

Ingredients

2 tsp olive oil
1 large onion, chopped
1 clove garlic, crushed
1 tsp cayenne pepper
2 tsp paprika
1 tsp dried oregano
2 tsp ground cumin
750g extra lean beef mince
1 1/2 cups beef stock
400g can diced tomatoes
1/2 cup tomato paste
300g can kidney beans, drained and rinsed
fresh parsley sprigs, to garnish

Directions

Heat the oil in a saucepan over low heat. Add the onion and cook for 4-5 minutes or until soft. Stir in the garlic, cayenne pepper, paprike, oregano, cumin and 1/2 teaspoon salt. Increase the heat to medium, add the minced beef and cook for 5-8 minutes, or until just browned.

Reduce the heat to low and add the stock, tomato and tomato paste. Cook for 35-45 minutes, stirring frequently.

Stir in the kidney beans and simmer for 10 minutes. Serve the chilli con carne on its own in small bowls or over rice. Garnish with a sprig of parsley.
