Chicken & Potatoes Dijon

1 1/3 pounds potatoes
4 scallions sliced
16oz chicken tenders
salt and pepper to taste
2 cloves garlic, minced
2/3 cup dry white wine or chicken broth
1 tbl Dijon mustard
2 tsp fresh tarragon or 1/2 tsp dried
1/4 cup sour cream
1- pierce the potatoes and microwave on high 10 minutes.
Cut into 1/2" cubes
2-Spray 12" skillet with cooking spray, add potatoes and scallions, cook over med high heat, tossing occasionally and adding more spray if necessary.
Cook until lightly browned about 10 minutes.
Put potatoes in a low oven to stay warm.
Spray pan again put in chicken tenders and cook until done, about 10 minutes, season with salt and pepper.
Add to potatoes in oven.
Add garlic to skillet and cook for 1 minute, add wine or broth and tarragon.
Cook until reduced by 1/2.
Remove from heat, whisk in sour cream and season with additional salt and pepper.
Pour over chicken and potatoes.
