4 small boneless skinless chicken breasts
14 oz can stewed tomatoes, undrained
1 green pepper cut into strips
1/2 cup sliced mushrooms
1/4 cup chopped onion
1/4 cup water or dry red wine
2 tsps Italian seasoning
1/8 tsp pepper
Spray large skillet with cooking spray. Preheat oven to medium heat.
Add chicken and cook about 6 minutes or until lightly browned, turning to brown evenly.
Stir in undrained stewed tomatoes. peppers, onions, water, italian seasoning and pepper.
Bring to a boil, reduce heat and simmer covered about 15 minutes or until chicken is no longer pink inside.
Remove chicken from pan and cover to keep warm.
Simmer tomato mixture uncovered about 5 minutes.
Serve over chicken
