| Ingredients Topping: 1 tbsp. butter or margarine. 1/4 cup bread crumbs 2 tbsp. grated Parmesan cheese Tortellini: 1 lb tortellini 2 tbsp. butter 1 small red pepper (1cup) diced 1 small green pepper (1 cup) diced 2 tsp. chopped garlic 2 tbsp. flour 2 cups milk 1 cup ricotta cheese 1/2 tsp. salt 1/8 tsp. cayenne pepper 1/2 cup grated Parmesan cheese Directions Topping:
In a small saucepan, melt the butter over medium heat. add bread crumbs; toss to coat.
Place crumb mixture in a small bowl. Add Parmesan; toss to combine.
Tortellini:
Preheat oven to 375F.
Grease a 2 quart baking dish.
Cook tortellini in a large pot of boiling water until just tender. Drain in a colander.
In a large saucepan, melt butter over medium heat. Add bell peppers and garlic.
Cook until peppers are soft. Stir in flour until smooth. Add milk; mix well.
Simmer until mixture is thickened, about 3 minutes. Remove the saucepan from the heat and stir in ricotta cheese, salt, cayenne pepper and Parmesan. Add tortellini to saucepan; toss to coat.
Spoon pasta into prepared baking dish and sprinkle with topping.
Bake until tortellini is heated through and crumbs are golden brown on top, about 30 minutes. |
