Carrot Cake

Ingredients

cake:

1 1/2 cups sugar
1 cup veg oil
3 eggs
2 cups flour
1 1/2 tsp baking soda
1 tsp vanilla
1/2 tsp salt
1/4 tsp nutmeg & cinnamon
5-6 med carrots grated
1 cup walnuts

frosting:

8 oz cream cheese
1 tsp milk
1 tsp vanilla
4 cups powdered sugar
1 stick of butter softened

Directions

beat sugar, oil, eggs, stir in flour, nutmeg, cinnamon, baking soda, vanilla and salt. add carrots and walnuts.

Grease and flour pan
Bake at 350F for 35 to 45 minutes

Frosting:

Beat all ingredients until smooth.
Frost cooled cake
