Caribbean Chicken Stir Fry

Ingredients

12 oz chicken breast tender
1/4 tsp salt
1/8 tsp cayenne pepper
1 tsp cooking oil
1 med sweet potato, peeled and halved lengthwise- sliced thinly
1 small banana chile
pepper seeded and chopped
3/4 cup unsweetened pineapple juice
1 tsp cornstarch
2 unripe bananas, quartered lengthwise and cut into 3/4 inch pieces

Directions

Season chicken with salt and cayenne pepper. In a large skillet cook chicken in hot oil for 3 minutes. add sweet potato and banana pepper. cook and stir for 5 to 6 minutes more or until chicken in no longer pink and sweet potatoes are tender.

In a small bowl combine pineapple juice and cornstarch, add to chicken mixture. cook stirring gently until thickened and bubbly. add bananas and cook for 2 minutes more. serve with rice
