Caribbean Chicken

Ingredients

12 oz. Chicken Breast tenders
1/4 tsp. salt
1/8-1/4 tsp. cayenne pepper
1 tsp. cooking oil
1 medium sweet potato, peeled halved lengthwise, & thinly sliced
1 small fresh banana chile pepper, seeded & chopped
3/4 cup unsweentened pineapple juice
1 tsp. cornstarch
2 unripe bananas, quartered lengthwise an cut into 3/4 inch pieces

Directions

Sprinkle chicken with salt and cayenne pepper, In large nonstick skillet, cook chicken in hot oil for 3 minutes. Add sweet pot. and banana pepper.
Cook and stir for 5 minutes more or until chicken is no longer pink and sweet pot. is tender.

In small bowl, combine pineapple juice and cornstarch; add to chicken mixture.
Cook, stirring gently, until thickened and bubbly. Add banana cook and stir for 2 minutes more. If desired, serve with cooked rice.
