Caramel Pie

Ingredients

Base:

250g plain sweet biscuits
125g butter
1/2 tsp cinnamon

Filling:

2/3 cup custard powder
2 cups cream
1 cup milk
1 tsp vanilla
125g butter
1 1/2 cups brown sugar, lightly packed
1 cup cream extra
2 tbsp caramel topping

Directions

Base:

Crush biscuits finely. Combine crumbs, melted butter and cinnamon in bowl. Press biscuit mixture over base of a pie dish. Refrigerate while preparing filling.

Filling:

Place custard powder in saucepan, gradually blend in cream, milk and vanilla, stir over tow heat until custard boils and thickens. Reduce heat and simmer gently for 1 minute. Melt butter in saucepan, add brown sugar and stir until dissolved, then bring to the boil. Quickly stir into the custard mix, return to heat, stir until brown sugar and custard are combined.

Cool slightly, pour into prepared crumb crust, refrigerate until firm. Spread with extra cream (whipped); drizzle caramel topping over. Swirl sauce through cream lightly with a knife for marbled effect.
