Beef and Vegetable Cheese Casserole

Ingredients

cooking spray
2 med tomatoes sliced
2 med zucchini sliced
12 oz raw lean ground beef
1 lg onion finely chopped
2 med garlic cloves minced
1 cup tomato sauce
2 cups fat free cottage cheese
1 lg egg yolk
1/2 cup low fat cheddar cheese
1 tbls parsley
1/8 tsp salt and pepper
basil

Directions

Preheat oven to 500F.
Coat baking sheet with pam and spread tomatoes and zucchini over sheet.
Roast for 10 - 12 minutes.

Meanwhile in a large skillet saute beef, onion and garlic until beef is browned.
Stir in tomato sauce and bring to a simmer.
Spread beef mixture in a large shallow baking dish and top with roasted vegetables.
Reduce oven temp to 350F.

Whisk together cottage cheese, egg yolk, cheddar cheese, herbs, salt and pepper in a med bowl.
Spoon over vegetables and smooth out.

Bake until very hot and bubbling around edges, about 35 minutes.
Cut into 6 pieces and serve
