1 can black beans- drained and rinsed
1 can black eyed peas- drained and rinsed
1 can white shoe peg corn drained
1/2 jar jalapeno peppers chopped fine
2 stalks celery chopped fine
1 med vidalia onion chopped small
1 jar pimentos drained and chopped
1/2 cup apple cider vinegar
1/2 cup sugar
1/2 cup canola oil
In small sauce pan heat oil, sugar and vinegar til sugar is dissolved.
Set aside and let cool.
Add the dressing to the vegetables and mix well.
Serve with tortilla chips
