Baked Haddock With Cheese Cracker Crunchy Topping

2 pounds haddock fillets, without skin
3 tablespoons butter
7 green onions, sliced
1 1/2 tablespoon fresh chopped parsley
3 tablespoons minced roasted red peppers
2/3 cup crushed cheeze it white Cheddar cheese crackers
1/3 cup plain bread crumbs
3 tablespoons half-and-half
salt and pepper
herb seasoning blend
Arrange fillets, in a buttered baking dish.
In a small to medium skillet heat butter over medium heat. Add green onions and roasted red pepper; saute until tender. Add parsley, cracker crumbs, and bread crumbs; stir to blend.
Add cream to moisten. Sprinkle haddock with salt, pepper, and herb seasoning. Sprinkle with the crumb mixture. Bake at 375F for 25 minutes, or until fish flakes easily with a fork.
