Avocado & Orange Salad

Ingredients

3 Tbsp. lime juice
salt & pepper
1/4 cup olive oil
2 navel oranges, peeled sectioned and white pith removed
2 ripe but firm avocados, peeled, pitted and cut into 1/2 inch pieces
1/2 red onion, thinly sliced
6 cups baby spinach, washed and dried well

Directions

To make dressing whisk lime juice, salt and pepper in small bowl. Slowly whisk in olive oil until well combined.
Place orange sections, avocados, onion and spinach in a lg bowl and drizzle dressing on top. Toss gently to coat. Serve immediately.
