Artichoke Spinach Spread in Wonton Baskets

32 wonton wrappers
2 tsp olive oil
1 med onion chopped
1 clove garlic chopped
2 tsps instant chicken stock
6oz bag baby spinach, chopped
14 oz can artichoke hearts in water, drained and chopped
1/2 cup parmesan cheese
1/2 cup sour cream
Coat mini muffin tin with cooking spray and press wontons into each tin to form a cup.
Lightly coat with cooking spray and bake 7 minutes in a 350F degree oven or until lightly brown.
Remove from over and cool.
Meanwhile, heat oil in a large skillet over med-high heat.
Add the onion, garlic, and chicken granules.
Cook until onions are soft, about 5 minutes.
Add the spinach , artichokes and cheese and cook until spinach is wilted.
Cool slightly and add the sour cream.
Spoon heaping tbl of the mixture into the wonton cups.
