1 Tbsp Vegetable Oil
1 lb 90% lean ground beef
1 pkg (8 oz) cleaned & cut diced peppers & onions
1/4 tsp chili powder
1/8 tsp ground cumin
1/4 cup water
Salt and pepper to taste
1 jar (16 oz) Roasted Chipotle Salsa
8 Whole Wheat Mini Pitas, split
1/2 cup Black Bean Dip
2 Romaine Hearts, finely shredded
2 avocados, peeled, pitted, diced
2 medium tomatoes, diced
1 cup Shredded Sharp Cheddar cheese

Heat oil in large skillet. Add beef, breaking up with spatula, and cook 2
min. Add peppers and onions; cook 1 min. Add chili powder, cumin, and 1/4
cup water; cook about 4 min until beef is thoroughly cooked. Season to
taste with salt and pepper. Heat salsa in small saucepan. Set aside and
keep warm. Toast split pita breads. Layer toasted pita breads with bean
dip, romaine, beef mixture, avocado, tomato, salsa, and shredded cheese.
