Spicy Tomato and Red Pepper Soup

1 red pepper
1 tin 14oz of chopped tomatoes
1 white onion
1/2 teaspoon of cayenne pepper
350ml chicken or veg stock
salt and pepper

Heat pan and add 1 Tbsp of oil.
Chop the onion and red pepper into big chunks and add to the pan put the
lid on and leave to sweat for 8-10mins shake the pan half way through so
the veg doesn't stick. Add tomatoes and stir leave for 1 min then add
stock. Season with salt and pepper and add cayenne pepper let the soup
come to the boil and simmer for 5 mins. Take the soup off the heat and
blend. Serve with thick slices of bread.
