Smoky Tomatillo Chicken

15 tomatillas -- shucked and crudely chopped
1 small onion -- chopped
2 chipotles in adobo -- chopped
3 clove garlic -- crushed
1/4 cup brown sugar
1 cup chicken stock
4 chicken breast -- boneless

Thoroughly mix all ingredients except for the chicken in your slow
cooker. Add the chicken and spoon the tomatilla mixture over it. Cover
and cook on low for 5 to 7 hours. Serve with warm tortillas or over rice.

Makes 3 to 4 servings.

Recipe Notes
This satisfying meal combines the smoky flavor of chipotles with the
subtle sweetness of tomatillos and brown sugar. You really cannot go
wrong with this recipe. I serve this meal in a deep plate over a bed
of rice. This allows you to get away with spooning more of the
flavorful sauce over it all.
