Pound Cake
Poundcake
Recipe by: Hellen Lane
3 sticks butter or margarine
3 cups sugar, sifted 3 times
8 eggs
3 cups plain flour, sifted 3 times
Dash of salt
2 teaspoons vanilla extract
Preheat oven to 350 degrees. Grease and flour tube cake pan. Using a
mixer, cream the butter. Add sifted sugar and cream together. Add 1 egg at
a time, beating well after each egg until all 8 eggs have been added. Add
flour, salt and vanilla and beat for 5 minutes. Pour into pan and bake for
1 hour. Remove from oven and let cake cool for at least 10 minutes before
turning it onto a cake plate. Variations: Substitute your favorite
flavoring for the vanilla. Add 2 cups chopped nuts. Dust nuts with 1
teaspoon flour so nuts won't sink to the bottom. Stir them into batter
gently with a spoon before pouring batter into cake pan.
