2 cup chopped onion
1 cup butter
2 eggs -- yolks and whites, beaten separately
1/2 cup cream or Milnot
Salt and cayenne pepper to taste
1 cup dry white wine
2 prepared nine inch pastry shells

Saute onions in butter until imp, but not browned. Cool. Preheat oven
to 350. Stir egg yolks, cream, salt and cayenne and wine into onions.
Fold beaten egg whites into onion mixture. Fill pie shells and bake 30
minutes. Serves 12 generously or serve 6 and freeze one. Serve as a
starch with steaks or roast beef. Serve hot or cold as a luncheon
dish. You may also precondition the crust by brushing with egg white
and baking for 8 to 10 minutes in a 400 oven. Crust should be cool
before mixture is poured in and baked.

1 1/2 cup crushed saltines
1 cup melted butter -- divided
3 1/2 cup sliced onions
1 cup milk -- scalded
3 eggs -- slightly beaten
1 teaspoons salt
1 cup sharp cheddar cheese -- grated

Make a pie crust of crushed crackers and 1/2 cup melted butter. Press this
mixture around the bottom and sides of a 10 inch pie plate. Saute onions
until tender, but not brown in 1/2 cup butter. Add the milk, eggs, salt,
and grated cheese. Pour this mixture slowly over the crust. Bake 50 to 60
minutes at 300 until the pie is golden brown.
Serves 8 to 10

Vidalia Onion Pie

1 1/2 cups finely crushed buttery crackers (Ritz or similar)
6 tablespoons (3/4 stick) unsalted butter (room temperature)
2 cups thinly sliced Vidalia onions
3/4 cup milk (not low-fat or non-fat)
3/4 teaspoon salt
3/4 cup packed grated sharp Cheddar cheese (about 3 ounces)
Chopped fresh parsley

Preheat oven to 350 degrees. Mix crackers and 4 tablespoons butter in bowl
until well blended. Press mixture on bottom and 1 inch up sides of 8- inch
pie plate. Melt remaining 2 tablespoons butter in heavy medium skillet
over medium heat. Add onions and saute until tender, about 12 minutes.
Arrange onions in cracker crust. Beat milk, eggs and salt in medium bowl
until blended. Season with pepper. Pour egg mixture over onions in crust.
Sprinkle cheese over filling. Sprinkle with paprika. Bake pie until knife
inserted into center comes out clean, about 35 minutes. Garnish with
parsley and serve. Serves 6
