Light Lemon Dipping Sauce

2/3 cup plain nonfat yogurt
1/3 cup fresh lemon juice
2 tablespoons Dijon mustard
1 tablespoons frozen apple juice concentrate -- thawed, or apple juice
1 tablespoons minced garlic
1 teaspoons curry powder

Whisk together all the ingredients in a bowl. Makes about 1 cup.

Recipe Notes
Serve this tart sauce with whole, cooked artichokes.
