Curried Nuts

500g Mixed Nuts
1 Egg white
2 tablespoon Curry Powder
1 teaspoon Cumin
Preheat the oven to slow 300F (150C/Gas2) Spread the nuts in a single layer on a
baking tray and roast for 10 minutes. Whisk the egg white until frothy, then add
nuts, curry powder, cumin and 1 teaspoon salt. Toss together and return to the oven
for a further 10 - 15 minutes, then allow to cool.
Makes 4 1/2 cups
Recipe Notes
recommended nuts are almonds, brazil nuts, pecans, macadamias, cashew nuts.
