Packing pickling cucumbers
I've made several different batches of quick pickles, dill, sweet,
bread and butter, and I'm having a lot of trouble packing them
correctly. I pack the cucumbers as tightly as I can in the jars but
them after processing there seems to be a lot of room left - like an
inch of brine in the bottom at the pickles are floating at the top. I
measure the head space carefully and almost all of them have extra
head space by the time I check the seals the next day.
Any suggestions? Is this normal? At least one recipe I read said the
cucumbers would shrink during process and plump later. How much later
are we talking?
Thanks for any help. Regardless of the details, it's nice to look in
the pantry and see it slowly filling back up.
