Hi there, does anyone know any good recipes for hot smoking marinades,
rubs etc?
I was at a barbecue in london the other day and I tasted something that
was really great. I just couldnt figure out what it was exactly. Was it
smoked chicken that had been BBQ d or just marinaded then kind of smoke
roasted on the grill?
The chefs looked really busy so I didnt ask.
I really want to build a box oven Barbecue kind of thing so that we can
do a kind of slow roast for large cuts of meat as well as the usual
bangers and burgers etc. Any got any tips (i'm gonna get the thing made
by a steel fabricator so it should be pretty sturdy - just wanna make
sure it comes out right..
