    Can eggplants be fermented with a salt solution? Thanks.

    The only answer I can give you Nick is "Maybe." I've read of fermented
    eggplant pickles but have never tried one. Lots of recipes say they're
    popular in the Middle East, I lived in the Middle East for five years
    and never saw a pickled eggplant or any kind of eggplant except in
    moussaka, fried, or turned into some other fried or baked dish.

    I consider eggplant, even the Japanese type to be to soft to make a
    decent pickle. I love the eggplant and we eat a lot of it but have never
    pickled it.

    If you find a decent, safe, recipe, please post it as I would be
    interested in trying it next time we harvest 75 lbs of eggplant over a
    growing season. After all, just how much moussaka and fried eggplant can
    two people eat?

    Thanks, George. Everything I've found is pickled with vinegar and stored
    under (olive) oil.
