My fave mnango recipe is one mango, washed and sliced on either side
of the "nut", and eaten! Mmmmmmm! And yes, mangoes are good, finally!

Mine is a baked chicken dish. I've not made it for a long time so I've
no photo series. Guess I'll have to fix that. <g>

Take one large chicken (approx. 5 lbs.) and spatchcock it (Butterfly
cut).

Take 2 mangoes, peel, remove seed and puree. To that, add one can of
crushed pineapple and 1 small bunch of scallions, finely chopped. Place
a light layer of that into the bottom of a baking dish. Place chicken
on top of that then pour remaining fruit and onion mix on top. Add a
very light sprinkling of fresh ground pepper. I use the 5 color mix but
plain black pepper will do.

Bake at 375 degrees for 1 hour and 15 minutes.

Served with your choice of sides.

I like mango pudding. I like the scene in Apocolypse Now where Chef
wants to get some mangos for mango pudding. He happens upon a ****ing
tiger! Hi tiger! Bye tiger! He yanks his shirt off on the boat and
