99% of the time I prefer scrambled eggs with nothing added while cooking,
and cooked very slowly to a perfect creaminess, salted and peppered at
table. Occasionally I like to add some grated cheddar near the end of
cooking, til just melted and incorporated.

Omelets, OTOH, I like widely varied and too numerous to mention. I don't
know if it's still there, but there used to be a restaurant in NYC, Madame
Romaine de Lyon, whose specialty was omemlets. IIRC there as a book-like
menu of oveer 500 different omelettes, all expertly prepared. I don't
think I ever ordered the same one twice, and every one delicious.

Scrambled eggs are good plain with a litte s&p. Sometimes I will use
salsa, green Tabasco or Chohula sauce.


This morning we had chilaquiles for breakfast, the eggs were cooked
sunny side up. I put a lid on the pot, so the whites were cooked all the
way through.
